Baked Oatmeal

This is one of our favorite breakfast recipes. I think I got it from MOMYS, but I can’t remember for sure.

Baked Oatmeal

6 cups oats
1 cup sugar
1 cup brown sugar
2 tsp. salt
1 tsp. baking powder
2 cups milk
1 cup oil
4 eggs

Combine and pour into greased 9 x 13 inch dish. Bake uncovered at 350 for 30 – 35 minutes.

mmmmmmmmm…. that sounds good. :o ) it is very similar to the recipe we make in the crockpot overnight. but! i bet this one is yummy with a crispy baked top as opposed to the steamed one from the crockpot. will try it, thanks!

Have you made it with a substitute for the oil? Applesauce? We try to avoid oil.

@Jeri Riddick, I’ve never tried this recipe with an oil substitute, but I would love to know how it turns out if you try it!

i just saw this comment. i usually substitute applesauce wherever a recipe asks for oil, except for stir fry of course ;o)
i DID use applesauce instead and it turned out fine. i lessened the sugar and did at a little melted butter… gotta have some butter, right???

Baked oatmeal, specifically my version of Lynn’s Peanut Butter Baked Oatmeal, is my comfort food in any weather. I make it so often, I don’t even need to look at the recipe anymore. (Had it for breakfast today!) :)

I bet that would be really good if you sliced an apple really really thin and baked on top of it!
