This week’s “Works For Me” tip is a no-brainer. In fact, y’all probably already do this or have at least already heard about it, but it’s the best I’ve got to offer right now.
Whenever I am making a casserole, whether it is lasagna, chicken spaghetti, or some other one-dish meal, I try to make three at once. We have one for dinner, and I stick the other two in the freezer. I label each one with the contents and date. This comes in handy on those busy days when I need a quick meal ready with minimal preparation. I can just go shopping in my freezer and pop one into the oven. Usually, an hour at 350 does the trick.
I use those disposable foil pans, if I have any on hand, for the freezer meals. That way, I have a ready made casserole to take to a family if a need arises (a birth, death, sickness, etc.) and no worries about losing my favorite casserole dish.
