Recycled Chicken ‘N Dumplin’s

**Go here [2]to see the recipe.

Our family loves to have chicken and dumplin’s. I boil a whole chicken, de-bone it, and then put everything back into the pot I used for boiling. This makes a huge mess o’ yumminess!

The next night, after we’ve eaten up our favorite part, the dumplin’s, we have chicken noodle soup. After that, my family is pretty of tired chickeny-soupy type meals, even though there is still a fair amount of chicken and broth left.

Then, just this week I came up with a way to recycle the leftovers! I poured what was left into a 9 x 13 pan and put in an equal amount of rice. I covered that with heavy duty aluminum foil and popped it into a 425 oven for 1 hour.

WAH-LAH! Chicken and rice casserole! We all enjoyed it, and the prep time was about 2 and a half minutes.

By the way, that whole chicken cost $4.29. That’s a pretty cheap, er, frugal way to feed 9 people for 3 meals! For lots more frugal tips, go to Biblical Womanhood [4].
