I got a couple of comments on this post asking me for the recipe I use for Chicken N Dumplin’s. We have tried several different recipes using tortillas, canned biscuits, and made from scratch dumplin’s, and have settled on our favorite.
First, I cover a whole chicken in water (be sure to remove the liver and other stuff inside the cavity first), add a chopped onion, several chopped cloves of garlic, and a chunky cut carrot. I put this on to boil and check it by piercing the chicken with a fork after about half an hour. If the juices run clear, I turn off the burner, pull out the chicken and set it on a cutting board to cool. Then, I remove the carrots, but I guess you could leave them in if your family likes them.
I de-bone the chicken and put the pieces back in the pot of hot water. I turn the burner back on to get the water boiling again and start on the dumplin’s.
We like the dumplin’s made from Bisquick best. For a while, I even tried using the homemade Bisquick mix recipe that I got here, but it just wasn’t as good. There was definitely a noticeable difference in texture and taste.
First, I thicken the broth by heating 1/2 cup of broth and 1/2 cup of Bisquick in a pan. When it is smooth and bubbly, I stir it into the big pot.
In a bowl, stir 2 cups Bisquick and 2/3 cup milk until soft dough forms. Drop dough by spoonfuls into pot of boiling liquid. Cook uncovered on LOW (this is critical) heat for 10 minutes. Cover and cook 10 minutes longer.
We have tried making more dumplin’s since that is our favorite part, but our big pot will absolutely not hold any more than this recipe makes.
