When I attended the blogger meet up last week, I wanted to bring a snack to share, so I went with a good ol’ family favorite, “Cracker Jack Snack”.
This is a simple and scrumptious treat I found in one of my favorite books, The Complete Tightwad Gazette.
I doubled this recipe and it made two huge bowls that were quickly devoured.
Easy Homemade Caramel Popcorn Recipe
3/4 cups brown sugar
1/4 cup butter
3 Tbsp. corn syrup
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. vanilla
8 cups popped popcorn (1 cup of kernels)
We use one of these Whirley-Pop stove-top popcorn poppers.
Combine first four ingredients over low heat until butter is melted.
Cook without stirring three minutes. Add baking soda and vanilla. Pour onto popcorn and mix until coated. Spread onto greased cookie sheet and bake 15 minutes at 300. Break into pieces.
Serve in coffee filters for easy clean up. Enjoy!
Make sure to pick out any unpopped kernels first. Trust me on this one. It’s never pretty when food makes people cry.
I think this would be extra yummy with salted peanuts added to the popcorn before the caramel mixture is poured on, though I’ve never tried it that way.
