Homemade Pie Crust in the Food Processor

by Smockity Frocks on April 19, 2010

Welcome to the newest edition of Tutorial Tuesday! Today I would like to show you how to make a super simple pie crust in the food processor that always turns out flaky and delicious!

We use this pie crust recipe for lots of dishes, including dessert pies (duh), chicken pot pie, calzones, and pop tarts.  What do you use pie crust for? Leave suggestions in the comments so we can all add to our recipe collections!

Here are the ingredients you will need:

Homemade Food Processor Pie Crust Recipe

  • 1 1/4 Cups flour
  • 1 stick of butter
  • 2-3 Tablespoons of ice water
  • food processor

(Please, do remember when watching this video that the camera adds 40 pounds. Really. I read it. I typed it out and then I read it.)

Okay, so I don’t have a food processor! What do I do?! I was getting all excited, but now I am thinking that if I combine the ingredients in a bowl and stare at them very hard, they will likely NOT make that nice ball of dough. Right? ;) So is there another way I can make it, without a food processor?

Smockity Frocks April 19, 2010 at 8:13 pm

@Alice, Here is a pie crust recipe (the old fashioned way!) from my friend, Lynn.

I don’t have a food processor, either, but I’m thinking about getting one. I make a lot of stuff from scratch, and I think my right arm is beginning to resemble Popeye’s from all the mixing & kneading!

I had no idea that the key was to make it cold. I have had 8 years of failed pie crusts… and it’s likely been because I make them at room temperature & pop them straight into the oven. Thanks for the tip!

Dana~Are We There Yet? April 19, 2010 at 8:57 pm

Oh, Connie! You have answered my fondest homemakeryish prayer. I love to cook and bake, and I LOVE to make things from scratch, but pie crust has eluded me lo, these many decades. I can’t wait to give this a try! You’re the best!

And also, I’m more than a teensy bit envious of your gorgeous baby bump! Our littlest man is 20 months and we’ve yet to be blessed again, but I’m ready!!

Mama Mirage April 19, 2010 at 9:12 pm

Oooh I don’t have a big food processor either. Just a Magic Bullet (which is a handy little thing in it’s own right…). I wonder if they make food processor attachments for the KitchenAid. Hmmmm…
So now after your post I’m thinking my repeated failure with pie crust had something to do with it not being cold. I’m really slow. I do everything slowly and methodically. By the time I’m done with it it’s always at least room temperature. :p I’ll have to try to up my snail speed I guess so it doesn’t get warm! Thank you!

Mama Mirage April 19, 2010 at 9:20 pm

BTW your maternity shirt is cute! Where did you get it? Or did you make it yourself?

Smockity Frocks April 19, 2010 at 9:52 pm

Thank you! I didn’t make it, but got it at a resale shop for $1.50!

Mama Mirage April 19, 2010 at 10:04 pm

@Smockity Frocks, Love a good bargain! It’s super cute. I was secretly hoping you made it so you could tell me how or where to get the pattern. ;)

My family loves beef or turkey pot pie with homemade pie crust. I think it’s the crust that does it – I always tease them that I could serve them pig slop and they’d eat it if there was pie crust on top! :) Thanks for the food processor idea. Sometimes I freeze my pie crust to use another day – and your food processor idea would make it easy to make a large batch – wrap into individual balls and save for another day.

Thanks!!

That’s great, thanks for that! Look forward to making it!!

I make my pie crusts this way too. One time I only needed half the recipe and left the dough in the freezer for 1 year (and forgot I had put it in there) and when I pulled it out it STILL made a delicious crust. That is my kind of dough.

Kalani April 20, 2010 at 4:05 pm

Thank you so much for posting this! I just made a pot pie for a friend who had a baby and hated spending $3 for crust! I can’t wait to try this out! Thanks again!!

I lurve making pie! I had made it by hand for 20 years until my mom asked why I didn’t use my Kitchen Aide. Duh! I tried it on low and it turned out beautifully. Although I froze it for 15 minutes instead of using ice water.

This is great! I got a food processor for Christmas, and I’ve been wondering if I could use it for pie crust. I just hadn’t looked around to find out yet. Now I don’t have to! Thanks!

Deb April 20, 2010 at 6:55 pm

I love the idea of using this for calzones. My question is – have you ever made them up and frozen them (uncooked)? If so, how do they do? How would you bake them after they were in the freezer?

Smockity Frocks April 20, 2010 at 10:20 pm

@Deb, I’ve never frozen them, but I would like to know the answer to this, too! Anyone..?

leslie April 20, 2010 at 11:32 pm

I love my food processor and use it for all sorts of things (even tortillas) but for some reason I have never thought to use it for pie crust. I don’t know why I never thought of it, but this seems so simple and what a great idea!

Sherry April 21, 2010 at 7:14 am

Too funny you posted this! I just made one 1/2 way in my food processor and 1/2 in kitchenaid. My processor bowl is small so I just had it do the cutting up the butter into the flour. :D

Have a great day!

Ooohhh… thanks for sharing. And look at you! You look beautiful!

Smockity Frocks April 21, 2010 at 4:16 pm

@Aubrey, Thank you! Would you mind calling me every morning to repeat that last part? K, thanks!

Traci April 21, 2010 at 8:22 am

Thank you!

Nikki April 21, 2010 at 6:45 pm

You are so cute Connie. I just love your videos. Sadly, I do not have a food processor. But if I ever do, I now know the pie crust recipe I’ll be trying on it.

Sharon @ UnfinishedMom April 22, 2010 at 6:56 am

This is perfect timing. One of my goals this year is to learn to make pie crust! I’m so glad you posted this!

Holly April 22, 2010 at 8:18 am

You ARE just too cute. :)

I never make pie crust. It scares the bejeebers out of me. I don’t mind MAKING it, per se, I just hate the rolling out part.

Charla @ Healthy Home Blog April 27, 2010 at 10:06 pm

Hi! I’m Charla, and I met you quite a while back at Southside. I love your videos. Very informative to watch. My mother made gravy like that a lot. Makes my mouth water just to watch you make it! :)

Julie April 29, 2010 at 9:17 am

I don’t have a large enough food processor, so, I grate my butter with the cheese grater (keep everything including the salt and sugar, in the fridge until ready to use) and then I place it all in my KitchenAid and turn it on low. Works wonderfully and I learned that little secret from watching a Martha Stewart show that featured a famous pastry chef as her guest. The pie crust recipe I use is called Pate Brisee and if you google it with Martha Stewart you will find it! ~Blessings, Julie

awwwh, you’re so cute in that video! Dumb question (maybe), but what do you fill your poptarts with? How thin do you roll the dough out? Do you bake them right away, then re-heat them? Thanks

Smockity Frocks January 23, 2011 at 11:23 pm

June,
I roll them “pie crust thin” and fill them with jelly. I bake them right away and they have never lasted long enough to re-heat! :o )

Hi – found your website and since we lost a Granny Smith apple tree yesterday, I tons (and I mean tons) of apples to use, can, or freeze. Thank you for the wonderful idea of using my KitchenAid Food Processor to make my crust. Normally I purchase the pre-made crust but you’ve made it look really easy. Just a suggestion with your videos. I noticed when you pulled the sharp blade out of the food processor you laid it on the counter, right where your youngest child was standing and pushing things out of the way. I have cut myself on them before they really hurt. Just a suggestion. You have a beautiful family. Thanks again.
