Do you know what flash freezing means?
I wrote a post about choosing and using ripe melons a while ago and I mentioned flash freezing, but after I got a comment questioning it, I realized not everyone knows what that means.
Flash freezing, in the food industry, means to freeze foods quickly by subjecting them to super cold temperatures so fewer ice crystals will form.
Flash freezing in the homemaker’s kitchen means something a little different since most of us don’t have the means to freeze foods at any other temperature than our good old freezer sustains.
In order to freeze foods quickly we can make the pieces small, by cutting the food up, and help them to freeze quickly by laying them spaced out on a tray.
One of the benefits of this is that many pieces can then be stored in a sealed bag or container and as many as needed can be taken out while the rest remain frozen because the pieces won’t stick together.
Flash freezing can be a great benefit when you find fruit on sale! You can stock up, cut up, and freeze, like I did with the cantaloupe in the photo above.
