As I was beginning to make baked oatmeal one recent morning, my 3 year old asked me to put strawberries in it. Since I had frozen strawberries, I thought I would delight her and give it a try.
At first I struggled with getting the whole, frozen berries to chop in the food processor. Then my 7 year old suggested I try putting them, with the milk, in the “smoothie maker” (aka blender).
That worked like a charm and we all enjoyed our new favorite breakfast, strawberry baked oatmeal!
Strawberry Baked Oatmeal Recipe (makes one 9×13)
- 6 cups oats
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 tsp. salt
- 1 tsp. baking powder
- 1 cup oil
- 4 eggs, lightly beaten
- 2 cups milk
- 2 cups strawberries
1. Combine dry ingredients in large bowl.
2. Add oil and eggs.
3. Blend milk and strawberries in blender.
4. Combine all ingredients.
5. Pour into greased 9×13 pan.
6. Bake uncovered at 350 for 35-40 minutes.
