Taco Soup Recipe

We have had taco soup twice in the past week, and it isn’t even because we had leftovers! My kids have begged for it!

This is a super simple recipe that you can simmer all day in the slow cooker if you are going to be away from home or for 20 or so minutes on the stove top if you need it in a hurry.

I have varied the ingredients a little each time I made it. It is very forgiving. Just add what you like, serve over tortilla chips, corn chips, or rice, and top with shredded cheese, sour cream, and whatever else you like.

Taco Soup Recipe

  • 1 lb. ground beef
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix (or about 1/2 cup of the bottled dressing)
  • 1 can diced tomatoes and chiles (Ro-tel)
  • 1 can tomato sauce
  • 1 can pinto beans
  • 1 can black beans
  • 1 can whole kernel corn
  1. Brown ground beef and drain.
  2. Add taco seasoning and 3/4 cups water. Simmer 5 minutes.
  3. In large pot, add ground beef, all canned ingredients with liquids, and ranch dressing.
  4. Simmer 15-20 minutes.
  5. Serve over tortilla chips, corn chips, or rice.
  6. Add shredded cheese, sour cream, guacamole, diced onions, and any taco toppings you like.
  7. ENJOY!

I’ve been making something like this for twenty years. Love it. Haven’t tried the ranch dressing part though. Next time!

I have taco soup on the menu for tomorrow night … but didn’t have a recipe. Thankfully, I have all of the ingredients you’ve listed above in our pantry. Taco soup, here we come! Thank you for the recipe!

This sounds like a great idea for friday dinner!

However, up for another ingredient translation? :)

Tomato Sauce here is what you call Ketchup, and last I knew neither came in cans lol. So I’m trying to figure what Tomato Sauce means in America. My best guess is Tomato Paste, which is basically tomato juice reduced and reduced and reduced some more until it is a very intense flavour, burgundy red and thick. It’s quite often used on pizza as the sauce base, if you want a more traditional flavour than the artificially sweetened tomato sauce/ketchup gives. Does that sound about right?

Our ketchup has sugar and vinegar added. Tomato sauce is the same consistency, but it is only pureed tomatoes, without the pulp and seeds. You could use tomato paste, but would need to add some more liquid.

That’s interesting to know, it would appear our tomato sauce is different to both those things, I looked up the ingredients – Tomatoes 80% (from Concentrate), Sugar, Salt, Acidity Regulator (Acetic Acid), Onion Powder, Herb & Spice Extracts. No vinegar, but plenty of extra stuff plus sugar and salt.

Watered down tomato paste or reduced tomato juice should do the trick

You learn something new every day, thanks for the info! Now I need to see if I can find me some ‘ketchup’ to try!

I have been hearing about taco soup for years but have yet to try it. I think this might be the week, and this is definitely the recipe!! Sounds yummy!!
Question- Do the Fritos get soggy under the soup?

Not if you have enough Fritos. I have seen some people say they add them on top.

This is the same recipe I use, and it is WONDERFUL! All of my kids say it’s their favorite. I always double the recipe and use garbanzo beans, black beans, and kidney beans (a can each). And, we put a dollop of sour cream in the bowl, sprinkle with Fritos, ladle in the soup and top with cheese. Mmmm, we just had this last week, and I could certainly make it again…

This is the same recipe I use. I always double it though. We eat it with fritos too, and I like to add some velveeta cheese to my bowl! It’s a wonderful dish when it’s cold outside!
