Cucumber Stackers {Easy Lunch Alternative to Sandwiches}

These easy cucumber stackers are a quick and easy lunch alternative to sandwiches.

Do you ever get into a sandwich rut? I don’t know about you, but making lunch appealing day after day is sometimes a challenge.

My eight children gobbled up these cucumber stackers for lunch, served with a side of chips. These would also make a festive hors d’oeuvre for a holiday party!

Easy Cucumber Stackers Recipe

  • 2 Cucumbers
  • 4 cans Tuna
  • Grape tomatoes
  • 2 Tbsp. Mayonnaise
  • 2 tsp. Mustard
  • Salt and pepper to taste

1. Thinly slice cucumbers.

2. Drain tuna.

3. Mix in mayonnaise, mustard, salt and pepper.

4. Spoon a dollop of tuna mixture onto each cucumber slice.

5. Top each with half a grape tomato.

*Feeds 8 children.

  1. I like this idea! I also put some hummus between two thin slices of cucumber and call it a cucumber-hummus sandwich!

  2. Delicious… My mom use to serve cucumber boat sandwiches which are similar. Cut cucumbers in 1/2 length wise so you have 2 long boats, use a spoon to scoop out seeds then fill the center with tuna or chicken salad. Cut into pieces appropriate for your child’s eating habbits. Use cut Veggies to decorate and sliced deli cheese on a toothpick for a sail.
